Since these soups are loaded with chunks of flavorful dried vegetables, I skipped this part. No doubt this would have bounced my pot of soup to a new level of flavor. But, I was more interested in cooking something good, quick and easy.
Most of the instructions also call for the addition of cream.
If you wish to cut down on fat, use milk. Coconut milk can also be substituted. These soup mixes are a great way to use up that leftover rotisserie chicken. Or, shred what’s left of Sunday’s pot roast.
